Homemade Granola {aka yummy}

In the next few weeks, we will embark on an 8-hour road trip with a 16-month-old and a Great Dane. I’m not sure which “child” will cause us more stress, but I do know I will be taking lots of snacks to keep everyone happy {hopefully}.

One of my and Prince Charming’s favorite snacks is homemade granola. If you have never had homemade granola, I promise you are missing out on deliciousness. I also promise that once you have tasted this homemade granola, you will never again be satisfied with store-bought granola.

I originally found this recipe on one of my favorite blogs, Passionate Homemaking. I have tweaked the original recipe a bit.

What you’ll need:

4 c rolled oats
3/4 c extra virgin coconut oil, melted {available at any health food store}
1/2 c butter, melted
1/2 c raw honey
1/2 c brown sugar
1 t salt
4 t cinnamon
2 t vanilla extract
1 c shredded coconut
1/2 c pumpkin seeds {raw, unsalted}
1/2 c sunflower seeds {raw, unsalted}
1/2 c sliced almonds

What you’ll do:

Preheat your oven to 200°. Pour all of the dry ingredients, except for brown sugar and cinnamon, in a large bowl. In a separate bowl, mix together the liquid ingredients, brown sugar and cinnamon. Pour the liquid ingredient mixture on top of the dry ingredients and stir until dry ingredients are evenly moist.

Pour granola into a flat baking sheet with sides and bake at 200° for 2 hours. Turn oven off and allow granola to cool down with the oven.

And PS – Not only does it make an excellent and healthy snack, but it is also delicious as a cereal with cold milk.

Ooey Gooey Fudge Brownies

Prince Charming and I love brownies! But not any brownie will do. We do not like the cake-like brownies that crumble when you pick them up…too dry. We prefer the brownie that somewhat melts in your hand, leaving a chocolate residue. Enter: my Ooey Gooey Brownie recipe.

This recipe was acquired by Prince Charming while he was still single and waiting for his Lady in Waiting. And ever since he found his Lady in Waiting, she has been making these brownies for him (and herself).

What you’ll need:

  • 1 2/3 cups sugar
  • 3/4 cup butter (sometimes I use 1/2 butter, 1/2 coconut oil)
  • 2 Tblsp water
  • 2 eggs
  • 2 tsp vanilla
  • 1 1/3 cups flour
  • 3/4 cup cocoa
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup semi sweet chocolate chips
  • 3/4 cup of walnuts (which are optional)

What you’ll do:

Preheat your oven to 350°. Beat sugar, butter, water, eggs and vanilla together. In a seperate bowl, sift together cocoa, flour, salt and baking powder. Add dry ingredients to wet ingredients and beat until well combined. Stir in chocolate chips (and nuts if desired). Pour into an 8×8 pan and bake at 350° for 18-25 minutes.

I usually bake mine for the full 25 minutes. Remember that because these are classified as ooey gooey, when you stick a toothpick in to test if they are done, it will come out…you guessed it…ooey and gooey.
